Try Pizza Green Beans

Even the pickiest of children tend to like pizza! We’re adding pizza-inspired flavors to a veggie-forward side dish to see if we can help your child add a little good-for-you green to their plate.

We’re calling it Pizza Green Beans!

This recipe serves a family of four and is designed to help children ages 3 and up learn to eat and enjoy a wide variety of vegetables. Sometimes, the biggest challenge is making it appealing, so they’ll at least TRY IT without too much push-back. Chances are, they’ll end up liking more than they think!

Letting your kids help in the kitchen usually pays off too, so wash your hands, grab a couple of aprons, and let’s get started. Grab these things:

  • 4 Tbsp. olive or avocado oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 ½ lbs. green beans
  • 1 (14.5 oz.) can low-sodium diced tomatoes
  • 1 Tbsp. oregano

To begin, have your child help trim the ends of the beans by snapping them off with their fingers. Once trimmed, cut (or break) the beans in halves or thirds.

In a large pan, heat oil over medium-high heat. Add the onion and garlic. Cook for 3 to 5 minutes, stirring occasionally, until the onion is translucent.

Add the green beans, cover the pan, and cook for 5 minutes.

Next, add the tomatoes and oregano. Stir and cover. Cook on low heat for 20 to 25 minutes or until the beans are cooked through, stirring occasionally. The sauce should thicken, and the beans should become tender.

Serve hot or cold. If you’d like, add a final drizzle of olive oil over the top.
