Hawaiian BBQ Chicken Tacos

Taco Tuesday just got an upgrade! Tacos are typically a crowd pleaser—delicious and satisfying at any age. And while we love our go-to favorites, sometimes it’s fun to switch it up and try something new. We have a tropical spin on a classic taco that your whole family will love. It’s super easy, too, which is always a welcome bonus, especially for weeknight dinners. Let’s get started!

Here’s what you’ll need:

  • 1 ¼ lbs. chicken breasts, cubed
  • 1 Tbsp. avocado oil (or any vegetable oil)
  • ¾ cup barbeque sauce
  • 6-12 taco-sized tortillas (whole wheat recommended)
  • 1 mango, diced
  • 1 avocado, diced
  • 2 Tbsp. cilantro, chopped

Now to put it all together:

  1. Pour the oil into a large frying pan. Add the cubed chicken and sauté until cooked thoroughly. If you are using a food thermometer, make sure the inside of the largest piece reaches 165 degrees.
  2. Drizzle the barbeque sauce over the cooked chicken. Stir it all together until the chicken is coated and then remove your pan from the heat.
  3. In a large bowl, combine the diced mango, diced avocado, and chopped cilantro into a flavorful Hawaiian salsa topping.
  4. Serve the ingredients in separate bowls with the tortillas for family-style assembly.

The rich, tangy chicken paired with the cool, sweet mango salsa brings a little extra flavor to the taco party and serves 4 to 6 people. Kids and parents alike know that even dragons love tacos!
