Sweet Gingered Carrots


Carrots are full of great health benefits. Did you know the root vegetable, while most commonly orange, also grows in purple, red, white, and yellow? It’s true! They’re not only delicious, but pretty to look at too and perfect for adding more colors to your plate.

Carrots are also known to be high in nutrients including beta-carotene and potassium. Eating them regularly may help promote healthy vision, balance blood sugar, boost brain health, and improve immunity. Whether served cold and crunchy or warm and soft, they’re a must during all seasons!

If your child needs a little nudge to eat their veggies, this is the perfect recipe to try because carrots release a wonderful sweetness when cooked. Make Gingered Carrots to spark their appetite and curiosity about new flavors.

It’s approved for children ages 3 and up—and they’ll love helping to mix it all together.

 Let’s get started! You’ll need: 

  • 1 lb. shredded carrots
  • ½ tsp. brown sugar
  • 2 tsp. parsley
  • 1 Tbsp. butter, melted
  • ⅛ tsp. ground ginger

Begin by steaming the carrots with your preferred method until they’re tender. You can use a double boiler, microwave, or steamer. The time will vary accordingly.

 Have your child combine the remaining ingredients in a small mixing bowl, stirring to combine until the sugar is dissolved. Pour it over the warm carrots immediately before serving.

Since 2004, she’s also been an active Junior League member and developed the Kids in the Kitchen program for their Detroit and Milwaukee chapters. Nicole and her husband, John, have three children. In her spare time, Nicole competes on a rowing team with the Detroit Boat Club Crew.
