Easy Side Dish: Italian Green Beans

Green beans are a staple in most kitchens and for good reason! They are both delicious and nutritious. Green beans are a rich source of vitamins A, C, and K. They also contain folic acid (which helps the body make new cells) and fiber (which plays an important role in digestion). Green beans are a great addition to dinner as a healthy side, especially when you kick them up a notch with this Italian-style version. By adding tomatoes and a dash of oregano, you’ll create a rich, savory dish to complement any meal.

Here’s what you’ll need:

  • 12-16 oz. green beans, frozen (defrosted)
  • 14.5 oz. jar of tomatoes, diced
  • 1 Tbsp. oregano, dried
  • Salt & pepper, to taste

Now let’s put it all together:

  • Grab a large pot and combine all the ingredients. Add salt and pepper to taste. Mix well.
  • Bring the mixture to a boil and leave it uncovered for about 5 minutes.
  • Reduce the heat and let it simmer for another 5 minutes to further blend the flavors.
  • Serve and enjoy!

If you have fresh chopped oregano on hand, our Grow Fit team suggests using about ¼ cup as a healthy substitute to the dried herb. This dish serves 6-8, depending on portion size. It reheats well to make great leftovers too! Click here to download the recipe card.
