Simple Versatile Bruschetta

There is just something magical about fresh tomatoes in the summertime. Whether you grow your own in a backyard garden or visit your local farmers’ market to scoop some up from your favorite community vendor, there are countless delicious ways to use them. We’d like to share a simple bruschetta recipe that’s easy to mix up and enjoy.

Here’s what you’ll need:

  • 1 1/4 lbs. fresh tomatoes
  • 1/4 cup oil
  • 3/4 cup basil, chopped
  • Salt & pepper, to taste

Now it’s time to mix it all together!

  1. Dice up your tomatoes. Make sure you scoop out the seeds and discard them. Taking the time to do this will help keep your tomatoes firm.
  2. Combine your diced tomatoes in a bowl with the oil and chopped basil.
  3. Season the mixture with salt and pepper to taste.
  4. Toss well to combine.
  5. Chill your bruschetta for at least 10 minutes before serving. This allows all the flavors to blend well together.
